These mini grasshopper ice cream pies will be the easiest and quickest summer dessert you will ever make! Oreo crust, creamy, minty ice cream filling and a drizzle of chocolate… yes please!

Once summer comes along all you want is to make quick, no bake tasty treats! I’ve got you covered. These grasshopper ice cream pies will be the easiest dessert you will make this summer. They’re refreshing, creamy and have just a hint of mint. The filling is frozen on an Oreo crust. Which no one can resist! These grasshopper ice cream pies are made in a muffin tin making it the perfect mini frozen treat. You also don’t have to worry about it melting, or cutting into it; anyone can get as much mini ice cream pies as they want! This tasty frozen treat only requires four ingredients and just 10 minutes to make! The rest of time you’ll be waiting for these ice cream pies to firm up so you can enjoy them.

Ingredients needed

  • Oreos: You will need approximately 2 cups of crushed Oreos.
  • Butter: I use unsalted butter.
  • Mint ice cream: The ice cream should be slightly soft. I measured out how much ice cream I needed, them let it sit at room temperature for a few minutes. Soft ice cream makes it easier to mix everything together.
  • Heavy whipping cream: This makes the ice cream and so creamy.

Making the ice cream pies

~ Measure out 2 cups of ice cream. Let it sit at room temp while preparing the crust. Softened ice cream is easier to mix with the heavy whipping cream.

  1. Prepare the pan. Line 12 muffin tins with cupcake liners and set aside.
  2. Make the crust. Reserve about 1 tbsp. or crushed Oreo’s to sprinkle on the ice cream pies once they are done. Stir the rest of the crushed Oreos and melted butter. Press the crust into the lined muffin tins. Set aside.
  3. Make the grasshopper pies. Whisk heavy whipping cream until stiff peaks form. Stir in the softened ice cream. Evenly spoon the filling into prepared muffin tins with crust. Freeze until firm. About 4-5 hours. Before serving, sprinkle with reserved Oreo crumbs and drizzle with chocolate or fudge sauce.
