Grasshopper Ice Cream Pie

These mini grasshopper ice cream pies will be the easiest and quickest summer dessert you will ever make! Oreo crust, creamy, minty ice cream filling and a drizzle of chocolate… yes please!


  • 2 cups Oreos, crushed
  • 2 tbsp. unsalted butter, melted
  • 2 cups mint ice cream, slightly softened
  • 1/3 cup heavy whipping cream


  1. Line 12 muffin tins with cupcake liners and set aside. 
  2. Reserve about 1 tbsp. or crushed Oreo’s to sprinkle on the ice cream pies once they are done.
  3. Stir the rest of the crushed Oreos and melted butter. Press the cookies into the lined muffin tins. Set aside.
  4. Whisk heavy whipping cream until stiff peaks form. Stir in the ice cream. Evenly divide the filling into prepared muffin tins with crust. Freeze until firm. About 4-5 hours.
