This peach crisp is one of my favorite desserts! The juicy peach filling, the crispy, crunchy oatmeal topping and a scoop of vanilla ice cream… it makes one delicious dessert! You will find yourself always reaching for just one more bite. It’s that good! My favorite ways to serve this delicious peach crisp is with a scoop of vanilla ice cream or whipped cream. I mean who will be able to resist this tasty summer dessert! Fruit crisps is the best way to use all the fresh fruit. They’re simple to make, easy and always a crowd pleaser.

Ingredients needed for the crisp
- Peaches: We will need 8 or 9 peaches. If the peaches are large, use 8. If they are small use 9.
- Sugar: Brown sugar is will be used for the crunchy oat topping. Granulated sugar will be used in the peach filling.
- Butter: We will be using cold cubed butter
- Flour: All purpose flour will work perfectly.
- Old fashioned oatmeal: Not quick oats.
- Vanilla extract
- Lemon juice
Making the peach crisp
- Prepare the peaches. Peel and core the peaches. Slice the peaches and place in large bowl. Then toss with sugar. Let the sliced peaches sit at room temperature for 5-10 minutes. After about 10 minutes you should see peach juice. If there is a lot, drain some of the juice.
- Make the oatmeal topping. In a medium bowl, whisk brown sugar, flour and old-fashioned oats. Cut cold butter into cubes. Add to the dry mixture and using a fork, pastry cutter or your hands cut the butter until the mixture resembles small crumbs.
- Assemble. Toss the sliced peaches with flour, vanilla extract and lemon juice. Spoon into 9 or 10 inch baking dish or cast iron skillet. Top with oatmeal topping. Bake until the topping is deep golden brown and crispy. Cool for 10-15 minutes before serving.

What kind of peaches should I use?
I recommend using fresh peaches. In my opinion, fresh peaches create the best crisp dessert. I haven’t tried using frozen or canned peaches. But you can definitely use canned or frozen peaches if that’s what you have on hand. If using frozen peaches, be sure to thaw and drain the peaches first. If using canned, drain the peaches first. Draining the peaches is important. You may also need to adjust the sugar. Usually canned peaches are sweeter, so you may need to add less sugar.
How Do I prepare the peaches
You can peel the peaches or leave the peach skin on. It’s completely up to you! Don’t slice the peaches too thin. The slices should be ½ an inch or more! Thin peaches can become too soft and mushy after baking.
How to store the peach crisp
Peach crisp can be stored in the refrigerator for up to 5 days. And 1-2 days room temperature. You can reheat the crisp in the microwave, or oven.

Ingredients
Oatmeal topping
- 5 tbsp. unsalted butter, cold, cut into cubes
- ⅓ cup light brown sugar
- ⅓ cup all purpose flour
- ⅔ cup old fashion rolled oatmeal
Peach filling
- 8–9 peaches, cored, peeled and sliced
- ¼ cup granulated sugar
- 2 tbsp all purpose flour
- 1 tsp lemon juice
- ½ tsp vanilla extract
Instructions
- Preheat oven to 350 F
- Place sliced peaches in a large bowl then toss with sugar. Let the peaches sit at room temperature for 5-10 minutes.
- Meanwhile, make the topping. Combine brown sugar, flour and old fashioned oats in a medium bowl. Cut in cold butter using fork, pastry cutter or your hands, until mixture resembles small crumbs. Set aside.
- Add flour, lemon juice, and vanilla extract to the peaches. Lightly toss to combine.
- Spoon peaches into 9 inch or 10 inch baking dish. Sprinkle with oatmeal crumble.
- Bake for 35-40 minutes or until topping is golden brown and crispy.
