These apple hand pies are the perfect last minute dessert. They are so easy and quick to make! Which is why I love them. Minimal prep time and ingredients are needed to make these delicious apple treats. Plus they are perfect for any occasion. Whether your making these for your family or for a larger crowed, these apple desserts will be gone within minutes!
So what makes these apple hands pies so quick and easy to make? Puff pastry sheets. I love having these stored in my freezer. Puff pastry sheets are a perfect way to make a tasty and quick dessert. Frozen puff pastry sheets are still flaky and buttery but without all the hard work of making the puff pastry. If you every made puff pastry, you know exactly what I mean. It’s a win, win. Quick for you and tasty for everyone.
Making the apple hand pies
- Thaw the puff pastry sheet. This can take up to 50 minutes. While the puff pastry is thawing make your apple pie filling.
- Make the apple pie filling: Peel, core, and chop the apples. In a skillet, melt the butter. Stir the brown sugar, cinnamon and nutmeg. Then add the apples. Stir to coat the apples in the brown sugar cinnamon butter and caramelized. Then add the water and cook until apples are tender. In a small bowl stir cornstarch and water. Add the cornstarch to the mixture and cook until thickened. Take off heat and set aside.
- Line a large baking sheet with parchment paper and set aside. Preheat oven to 400F.
- Make the puff pastry apple hand pies. Roll the dough out just a little. About ½ inch on each side. Cut the dough into 12 equal rectangles. Arrange apple pie filling in the center of 6 of the rectangles. Top each hand pie with the rest of the puff pastry dough. Pinch with your fingers to seal the puff pastry. Transfer to a baking sheet. Cut two slits. Brush the hand pies with egg wash and sprinkle with course sugar. Bake for 15 minutes or until golden brown.
Serve with a scoop of ice cream, drizzle with some caramel or eat as is! They taste delicious either way.
Tips
- Adjust the amount of sugar as needed. Add more sugar if you are using tart apples. If the apples are sweet add less sugar. Taste the apples as they are cooking and adjust.
- Make sure to cook your apples until they are tender. They should still have a slight crunch but should be slightly soft as well. Overcooking the apples cause the apples to become too soft after baking.
- Use coarse sugar when sprinkling the hand pies. It adds a nice crunch. If you use granulated sugar it may become absorbed into the dough when baking.
- Feel free to make the hand pies smaller or larger. 12 rectangles makes medium sized hand pies.
- The apple filling should thicken after the adding the cornstarch, if it doesn’t sprinkle ½ teaspoon of cornstarch to the apple filling. Then stir until incorporated.
Before sealing the pies, drizzle the apples with some caramel. This adds a delicious caramel flavor to the apples.
What kind of apples do I use?
I like using honey crisp apples or granny smith apples. They don’t get as mushy after baking. You can use any kind of apples that you like. Just be sure to adjust the amount of sugar.

Ingredients
- 1 puff pastry sheet, thawed
- 2 medium apples, peeled, cored, chopped
- 1 tbsp. unsalted butter
- 2 – 2 ½ tablespoons. brown sugar*
- 1 teaspoon cinnamon
- ⅛ teaspoon. nutmeg
- 3 tablespoons water
- ½ teaspoon cornstarch mixed in 1 tablespoon water
- 1 egg for egg wash
Instructions
- Thaw puff pastry. (this may take up to 50 min) While the puff pastry is thawing make your apple pie filling.
- Peel, core, and chop the apples.
- In a skillet, melt the butter. Add brown sugar, cinnamon and nutmeg. Stir until apples are coated. Then add the 3 tablespoons of water and cook until apples are tender.
- Add the cornstarch mixture and cook until thickened. Take off heat and set aside.
- Line baking sheet with parchment paper and set aside.
- Preheat oven to 400F.
- Cut the dough into 12 equal rectangles. Add the apple pie filling to 6 of the rectangles. Top each rectangle with the rest of the puff pastry dough. Pinch the dough with your fingers to seal. Transfer the apple hand pies to lined baking sheet. Then using a knife cut two slits on top of each hand pie.
- In a small bowl whisk the egg. Brush the hand pies with whisked egg and sprinkle with course sugar.
- Bake for 15-20 minutes or until golden brown.
