Ingredients

  • ½ cup unsalted butter, cold, cut into cubes
  • ¼ cup brown sugar
  • 1 cup all purpose flour

Cheesecake filling

  • 1 (8oz) cream cheese, room temp
  • 1 large egg, room temp
  • ¼ cup granulated sugar

Apple filling

  • 3 medium sized apples, peeled, cored, cut into small cubes
  • 1 tablespoon brown sugar
  • 1 teaspoon ground cinnamon

Crumble topping

  • ⅓ cup all purpose flour
  • ⅓ cup brown sugar
  • ⅔ cup old fashioned rolled oats
  • 5 tablespoon unsalted butter, cold, cut into cubes

Instructions

Crust

  1. Line 8x8in pan with parchment paper. Preheat oven to 350 F.
  2. In a medium bowl whisk together brown sugar and flour.
  3. Add cubed butter. Using a pastry cutter, fork or your fingers, work the butter into the flour mixture until it resembles large crumbs.
  4. Press into prepared pan. Bake for 10-13 minutes or until lightly golden brown around edges. 
  5. Set aside while preparing the rest of the bars.

Cheesecake

  1. Beat together cream cheese and sugar until combined.
  2. Add the egg and beat until combined.
  3. Pour over crust. 
  4. Set aside while preparing the rest of the layers.

Apple filling

  1. Dice cored and peeled apples into small chunks. 
  2. Add brown sugar and cinnamon. 
  3. Carefully place over the cheesecake layer. 
  4. Set aside while preparing the topping.

Oatmeal crisp topping

  1. Whisk together flour, brown sugar and oats.
  2. Add cold butter. Using a pastry cutter, fork or your fingers, work the butter into the flour mixture until it resembles course crumbs.
  3. Sprinkle over the apples. 
  4. Bake for 25-30 minutes or until topping is golden brown. 
  5. Drizzle with caramel. 
  6. Cool completely before cutting.
