Raspberry oatmeal crumble bars – A perfectly sweet and tart raspberry filling baked on a buttery and crumbly crust and sprinkled with crispy oatmeal topping.
These raspberry oatmeal crumble bars are the perfect addition for your spring and summer bakes. They’re perfect as a snack or as a dessert. They’re not overly sweet. And everyone will love them! Which makes them the perfect dessert for your next gathering.
So what are raspberry oatmeal crumble bars? These bars consists of a shortbread crust, a raspberry filling and an oatmeal crumble topping.
The shortbread crust – buttery, a little crumbly but still holds it’s shape with every bite. This shortbread crust perfectly holds everything together.
The raspberry filling – Some recipes call for making your own raspberry filling. But I wanted to make things easy. So I use store bought raspberry preservers or jam. I also add a little bit of fresh raspberries to the jam to add a little bit of tartness to the dessert.
The oatmeal topping – Because who doesn’t love a good oatmeal topping? The crispy oatmeal topping brings the whole dessert together.
Ingredients needed
- Butter: I use unsalted butter to create that delicious butter crust and topping.
- Flour: I prefer using all purpose flour.
- Sugar: The crust requires a little bit brown sugar and granulated sugar to create a soft and slightly crumbly crust. The topping will have a little bit of brown sugar to create a delicious crunchy topping.
- Oatmeal: You will need old fashioned rolled oats. Don’t use quick oats as it will change the texture of the crumble topping.
- Raspberry jam: Any raspberry jam or even flavor that you like will work for this recipe.
- Raspberries: You’ll need a few raspberries. These will be added to the filling.
Making the raspberry crumble bars
- Prepare the pan. Line an 8×8 pan with foil. Make sure the foil extends over the edges for easier removal. Set aside.
- Make the crust: Mix melted butter, sugars and flour. It should come together and start forming a bowl. Press the mixture into prepared pan. Bake for 10 minutes.
- Make the topping. Place oats, flour and brown sugar into a medium bowl. Cut the cold butter into the mixture using a fork, butter knife or pastry cutter. Keep on cutting the butter into the mixture until the mixture resembles medium sized crumbs.
- Assemble: Spread raspberry jam over the baked crust. Add a few fresh raspberries. Sprinkle the oatmeal crumble over the raspberry jam/raspberries.
- Bake and cool. Bake the crumble bars for 30-40 minutes or until top is golden brown. Let the bars cool completely before cutting them.

Oatmeal topping
- 3 tbsp. unsalted butter, cold, cut into cubes
- ½ cup old fashioned rolled oats
- 3 tbsp. all purpose flour
- ¼ cup brown sugar
Filling
- ½ – ⅔ cup raspberry preserves
- handful fresh raspberries
Instructions
