12 tbsp unsalted butter, room temperature
2 cup all purpose flour
3/4 cup brown sugar, packed
1/4 cup granulated sugar
1 egg + 1 egg yolk
1 1/2 tsp vanilla extract
1 tsp baking soda
1 tsp cornstarch
pinch of salt
1 cup white chocolate chips
Instructions
Add butter to a medium sauce pan. Brown the butter on medium – high heat until butter is melted, dark golden brown and has a nutty smell. Set aside. Cool for 5-10 minutes.
Preheat oven to 350 F. Line large baking tray with parchment paper.
In a medium bowl whisk flour, baking soda, cornstarch and a pinch of salt.
To a stand mixer add, brown sugar, granulated sugar and browned butter. Beat until combined. 2-3 minutes.
Add egg, egg yolk and vanilla extract. Beat until combined.
Add flour mixture. Beat on low speed until just combined.
Fold in in white chocolate chips.
Using a cookie scoop drop about 1 tbsp. of cookie dough balls on lined baking sheet.
Bake 9-12 minutes or until cookies are lightly golden brown around the edges. Do not over bake.
Cool cookies for 5 minutes on baking sheet before transferring to cooling rack.
