Honey Cookie Sandwich

These honey sandwich cookies are soft, and filled with a layer of jam that seeps into the layers as they rest. The result: a melt-in-your-mouth texture with a delicate honey sweetness and a perfect jam center in every bite.

Ingredients

  • 1/3 cup + 2 tbsp. granulated sugar
  • 1 large egg
  • 1/2 tsp baking soda + 1 tsp. white vinegar
  • 1 tbsp. honey
  • 1 1/2 cups all purpose flour
  • 8 tbsp. (1 stick) butter
  • Jam for filling (any kind)

Instructions

  1. In a food processor, hand or fork, pulse butter and flour until mixture resembles small crumbs. Transfer to a large bowl and set aside.
  2. In a mixer mix eggs and sugar until light and fluffy.
  3. In a small bowl, add the baking soda. Pour vinegar over the baking soda. It should immediately puff up and have bubbles. Set aside.
  4. Add the egg mixture to the flour mixture and mix with a spatula until combined. 
  5. Add the baking soda mixture and honey. Mix until the cookie dough comes together and forms a ball.
  6. Cover with a paper towel or saran rap and let the cookie dough rest at room temperature for 30 minutes.
  7. Preheat oven to 350 F. Line a large baking sheet with parchment paper. Set aside. 
  8. Place the dough on a floured surface and roll the dough out. Cut into 1.5 to 2 inch circles. Transfer to lined baking sheet.
  9. Bake for 8-10 minutes or until cookies are golden brown. Cool cookies completely.
  10. Spread jam filling onto one cookie then top with another cookie, like making a sandwich.  Dust with powdered sugar.

Notes

  • Baking time can be different depending on the size of the cookie. If the cookie is small, baking time will be decrease. If the cookie is large baking time will increase.
  • Make sure you honey is runny. It’s a lot easier to mix into the dough. If your honey isn’t runny, microwave it for a few seconds.
