Ingredients

Scale
  • 2  cup all purpose flour
  • 3/4 cup brown sugar, lightly packed
  • 1/4 cup granulated sugar
  • 12 tbsp. butter, room temperature
  • 1 large egg, room temp
  • 1 egg yolk, room temp
  • 1.5 tsp. vanilla extract
  • 1/2 tsp. baking soda
  • 1/4 cup + handful of chocolate chips
  • 2 graham crackers crushed + 2  graham crackers broken into pieces
  • ~ 8 large marshmallows, cut in half
  • Chocolate chunks or chocolate chips for topping

Instructions

  1. Preheat oven to 350 F. Lightly butter a 9 or 10 inch cast iron skillet and set aside.
  2. Crush 2 honey graham crackers using a food processor or with a rolling pin. Then place in a small bowl and set aside.
  3. Combine flour, baking soda and salt in a medium bowl. Then set aside.
  4. In a bowl of a stand mixer, beat butter for one minute until smooth.
  5. Add the sugars. Beat until combined and smooth.
  6. Add the egg, egg yolk and vanilla extract. Beat until fluffy and smooth.
  7. Add the crushed graham crackers and flour mixture. Beat on low speed until just combined. Stir in 1/4 cup of chocolate chips.
  8. Press half of the chocolate chip cookie dough into the cast iron. Then add graham crackers, handful of chocolate chips and marshmallows. Press the remaining dough over the filling. (it’s ok if the dough doesn’t cover every bit of the filling) Add a few more marshmallows and chocolate chunks to the top.
  9. Place the cast iron skillet in the oven and bake for 19-21 minutes or until edges are lightly golden brown.
