S’mores Stuffed Skillet Cookie

This s’mores stuffed skillet cookie is filled with all sorts of goodies! Chocolate chips, graham crackers and marshmallows. It’s made with simple ingredients you probably already have on hand! Plus it’s so quick and easy to make. Serve this giant s’mores cookie with a big scoop of vanilla ice cream… and dig in!

If you didn’t think a chocolate chip cookie can get any better… well it can. Specifically a s’mores stuffed chocolate chip cookie. It’s two delicious desserts combined into one! And it’s insanely delicious. This s’mores stuffed skillet cookie is gooey, has puddles of melted chocolate and perfectly toasted marshmallows. This giant cookie is baked in a cast iron skillet. It’s so quick, easy and so much fun to make! The best part is that, this dessert does not need to look perfect. It’s meant to look messy and gooey.

Ingredients needed

  • Butter: The butter needs to be room temperature.
  • Sugar: We will be using brown sugar and white sugar.
  • Eggs: We will be using one egg and one egg yolk.
  • Vanilla extract
  • Flour: I use all purpose flour.
  • Baking soda
  • Salt
  • Chocolate: I prefer using chocolate chips for the cookie dough and chocolate chunks for the top of the cookie.
  • Graham crackers: Crushed graham crackers will go into the cookie dough. Graham cracker chunks will go into the stuffed cookie.
  • Marshmallows: We will be using large marshmallows torn in half.

How to make the s’mores skillet cookie

Make the chocolate chip cookie dough

  1. Crush 2 honey graham crackers using a food processor or rolling pin. Then place in a small bowl and set aside.
  2. Combine flour, baking soda and salt in a medium bowl. Then set aside.
  3. In a bowl of a stand mixer, beat butter for one minute until smooth. Then add the sugars. Beat until combined and smooth. Next add the egg, egg yolk and vanilla extract. Beat until fluffy and smooth. Then add the crushed graham crackers and flour mixture. Beat on low speed until just combined. Stir in ¼ cup of chocolate chips.

Assembling the s’mores stuffed cookie

  1. Lightly butter 9-inch cast-iron skillet. Press half of the chocolate chip cookie dough into the cast iron. Then add graham crackers, chocolate chips and marshmallows. Press the remaining dough over the filling. (it’s ok if the dough doesn’t cover every bit of the filling) Add more marshmallows and chocolate chunks to the top. Place the cast iron skillet in the oven and bake for 19-21 minutes or until edges are lightly golden brown.

Serve warm with a scoop of ice cream.

Tips for success

  • Use any kind of chocolate for the chocolate chip cookie dough. Chocolate chips or chocolate chunks. I prefer using semisweet chocolate chips or dark chocolate chips.
  • Use large marshmallows. I found that large marshmallows don’t melt away in the chocolate chip cookie. The marshmallows stay gooey and perfectly toasted.
  • Don’t forget to add more marshmallows and chocolate chunks on top! Just a few more chocolate chunks and marshmallows will make all the difference! I prefer using chocolate chunks on top. Chocolate chunks create those delicious chocolate puddles. You can also use Hershey bars that have been broken into pieces.
  • It’s ok if the cookie dough doesn’t cover the whole cookie. I actually prefer leaving some of the marshmallows exposed. This creates toasty and gooey marshmallows.
  • If the dough is sticky, you can place it in the refrigerator for about 15 minutes to help it firm up.
  • Don’t over bake! The cookie should be golden brown around the edges and slightly golden brown towards the middle. I bake mine for 20 minutes.

  • 2 ¼ cup all purpose flour
  • ¾ cup brown sugar, lightly packed
  • ¼ cup granulated sugar
  • 11 tbsp. butter, room temperature
  • 1 large egg, room temp
  • 1 egg yolk, room temp
  • 1.5 tsp. vanilla extract
  • ½ tsp. baking soda
  • ¼ cup + handful of chocolate chips
  • 2 graham crackers crushed + 2  graham crackers broken into pieces
  • ~ 8 large marshmallows, cut in half
  • Chocolate chunks or chocolate chips for topping

Instructions

  1. Preheat oven to 350 F. Lightly butter a 9 or 10 inch cast iron skillet and set aside.

  3. Combine flour, baking soda and salt in a medium bowl. Then set aside.
