Slow Cooker Shredded Chicken Tacos

These shredded chicken tacos turns out so juicy and flavorful! Cooked in spices and chipotle sauce this chicken can be used in so many dishes. And it’s cooked in a slow cooker so it’s perfect for those busy days.

Ingredients

  • 2 lbs. chicken breast
  • 1 (14.5 oz.) can, diced tomatoes
  • 1 (7 oz.) can chilies in adobo sauce
  • 1 jalapeno, chopped
  • 1/2 tsp. oregano
  • 1/2 tsp. cumin
  • 1 tsp. onion powder
  • 1 tsp. garlic powder
  • 1 tbsp. chili powder
  • 1 tsp. paprika
  • 2-4 tsp. brown sugar *

Instructions

  1. Place all ingredients in slow cooker. Mix to get the chicken coated.
  2. Cook on low 6-7 hours or until chicken can easily be shredded with a fork. 
  3. Remove chicken and shred it on a cutting board. 
  4. Drain the liquid from the slow cooker. Leave a little bit of liquid. 
  5. Place the shredded chicken back into the slow cooker and cook for about 10 minutes or until liquid is absorbed.
  6. Serve with your favorite taco toppings.

Notes

* If you only add 2 tsp of sugar, the chicken turns out mild – spicy. You can add more sugar for a more mild flavor.
