Taco night just got so much easier! All you have to do is place the ingredients in your slow cooker and walk away. Let the slow cooker do its magic!
These tacos will become your families favorite taco recipe. I know this because it has become ours! It’s tender, flavorful, has the right amount of spice and has a smoky flavor to it. Adding chipotle peppers in adobo sauce gives the chicken its delicious smokey flavor. I love what it does to the chicken. It completely transforms the whole dish! It gives it so much more flavor.
How to make the slow cooker shredded chicken tacos
Place chicken and all the ingredients in slow cooker. Cook on low for 6-7 hours or until chicken is tender and you are able to shred it with a fork. Place chicken on cutting board and shred. Drain the liquid from the slow cooker but leave a little bit of liquid. Place the shredded chicken back into the slow cooker and cook for about 10 minutes or until the liquid is absorbed.
Serve as tacos, burritos, chimichangas, enchiladas, tacos.. the options are endless. Add your favorite toppings and you’re set!
Can I freeze the shredded chicken?
Yes! This is one of the many reasons why I love this recipe. The chicken can easily be frozen and then thawed before using. You can also heat it up in a skillet or microwave it. Which ever method you will choose it will still taste so good!
What to serve with the tacos
There are so many ways you can serve these delicious tacos. You can serve them with corn or flour tortillas. Any Mexican rice of your choice. And lots of topping like: guacamole, lettuce, cabbage, pico de gallo, jalapeno, cilantro, cheese, beans, and hot sauce.

Slow Cooker Shredded Chicken Tacos

- 2 lbs. chicken breast
- 1 (14.5 oz.) can, diced tomatoes
- 1 (7 oz.) can chilies in adobo sauce
- 1 jalapeno, chopped
- ½ tsp. oregano
- ½ tsp. cumin
- 1 tsp. onion powder
- 1 tsp. garlic powder
- 1 tbsp. chili powder
- 1 tsp. paprika
- 2–4 tsp. brown sugar *
- Place all ingredients in slow cooker. Mix to get the chicken coated.
- Cook on low 6-7 hours or until chicken can easily be shredded with a fork.
- Remove chicken and shred it on a cutting board.
- Drain the liquid from the slow cooker. Leave a little bit of liquid.
- Place the shredded chicken back into the slow cooker and cook for about 10 minutes or until liquid is absorbed.
- Serve with your favorite taco toppings.
* If you only add 2 teaspoon of sugar, the chicken turns out mild – spicy. You can add more sugar for a more mild flavor.
