This peach crisp is one of the best summer treats! The crisp is baked until the peaches are soft and juicy; and the oatmeal topping is perfectly golden brown and crispy.

Oatmeal topping
5 tbsp. unsalted butter, cold, cut into cubes
1/3 cup light brown sugar
1/3 cup all purpose flour
2/3 cup old fashion rolled oatmeal
Peach filling
8-9 peaches, cored, peeled and sliced
1/4 cup granulated sugar
2 tbsp all purpose flour
1 tsp lemon juice
1/2 tsp vanilla extract
Instructions
Preheat oven to 350 F
Place sliced peaches in a large bowl then toss with sugar. Let the peaches sit at room temperature for 5-10 minutes.
Meanwhile, make the topping. Combine brown sugar, flour and old fashioned oats in a medium bowl. Cut in cold butter using fork, pastry cutter or your hands, until mixture resembles small crumbs. Set aside.
Add flour, lemon juice, and vanilla extract to the peaches. Lightly toss to combine.
Spoon peaches into 9 inch or 10 inch baking dish. Sprinkle with oatmeal crumble.
Bake for 35-40 minutes or until topping is golden brown and crispy.
