This one pan tortellini with sausages and kale is easy and quick to make. It’s comforting and so flavorful. It’s perfect for a weeknight dinner.

Ingredients

  • 1 small yellow onion, diced
  • 1/2 pound Italian sausage links, casing removed, then cut into chunks
  • 3 garlic, crushed
  • 9-12 oz. cheese tortellini 
  • 1 can (14.5 oz.) diced tomatoes, with juices
  • 1 cup chicken broth
  • 1/2 cup half and half
  • handful of kale, broken into pieces 
  • Pepper to taste

Instructions

  1. Heat medium deep skillet. Add the chopped onions and sausage chunks. Cook until the sausages are cooked through and are nicely brown. Break the sausages into smaller pieces as you cook them.
  2. Add the garlic. Cook until fragrant.
  3. Add the diced tomatoes, half and half, chicken broth and tortellini. Bring to a boil. Turn down the heat, cover and simmer for 20 minutes. Most of the sauce should be absorbed by the tortellini. But you still want a little bit sauce left. Season with pepper if needed.
  4. Add the kale and stir until wilted.
