One pan Tortellini

This one pan tortellini with kale and sausage is so simple to make. It’s comforting and full of flavor. It’s perfect for a weeknight dinner.

I love one pan dinners. I love the simplicity and most importantly you don’t have lots of dishes in the end. This one pan tortellini recipe is no different. And who doesn’t like tortellini? You can have tortellini so many different ways! My current favorite combo is tortellini with some sausages and kale. It’s a perfect weeknight dinner. This one pan tortellini is comforting, filling, flavorful and has lots of greens.

Ingredients needed

  • Tortellini: You will need 9-12 oz. of tortellini. I buy the big packages of tortellini at Costco and then divide everything into 12 oz. I think if you buy them individually they are sold in 9 oz. Either one will work for this recipe.
  • Sausages: Any Italian sausage will work. I use hot Italian sausage links. (it gives the dish a nice kick) I prefer sausage links, not ground sausage. Sausage links break nicely into small chunks. Ground sausage breaks into crumbles. You can use whichever you prefer.
  • Onion
  • Garlic
  • Diced tomatoes: Don’t drain the liquid.
  • Chicken broth
  • Half and half: I prefer using half and half than heavy whipping cream. It makes the dish lighter and still keeps it creamy.
  • Kale: Spinach can be used as well.

Making the tortellini

  1. Heat medium deep skillet. Add the chopped onions and sausage chunks. Cook until the sausages are cooked through and are nicely brown. Break the sausages into smaller pieces as you cook them.
  2. Add the garlic. Cook until fragrant.
  3. Add the diced tomatoes, half and half, chicken broth and tortellini. Bring to a boil. Turn down the heat, cover and simmer for 20 minutes. Most of the sauce should be absorbed by the tortellini. You still want a little bit sauce left. Season with pepper if needed.
  4. Add the kale and stir until wilted.

Ingredients

Scale
  • 1 small yellow onion, diced
  • ½ pound Italian sausage links, casing removed, then cut into chunks
  • 3 garlic, crushed
  • 9–12 oz. cheese tortellini 
  • 1 can (14.5 oz.) diced tomatoes, with juices
  • 1 cup chicken broth
  • ½ cup half and half
  • handful of kale, broken into pieces 
  • Pepper to taste
