Linzer cookies are buttery almond shortbread cookies that have a raspberry jam filling and dusted with powdered sugar.

1 cup unsalted butter, room temp
2/3 cup granulated sugar
1 egg
1 tsp vanilla extract
1/2 tsp baking powder
1 3/4 cup all purpose flour
3/4 cup almond flour
Raspberry jam/preserves
Instructions
In a medium bowl whisk flour, almond flour and baking powder. Set aside.
Beat butter and sugar until fluffy.
Add the egg and vanilla extract. Beat until combined.
Add the flour mixture and mix until incorporated.
Transfer the dough to plastic wrap, shape into a disk, wrap and refrigerate for at least 1 hour.
Preheat oven to 350 F. Line a large baking sheet with parchment paper.
Transfer the dough to a floured surface. Divide the dough into two and roll one half out into 1/4 inch thickness. Cut out into 2 inch circles using a cookie cutter. Transfer to a baking sheet lined with parchment paper.
Roll out the other half of the dough and cut into circles. Take a smaller circle and cut out the centers. Transfer to a cookie sheet.
Bake for 10-13 minutes or until cookies are lightly golden brown around the edges. Cool completely before filling with jam. Dust with powdered sugar.
