Easy Apple Parfait with Granola

These apple parfaits are the perfect fall dessert. Enjoy these as a dessert, as a snack or as a breakfast treat. These parfaits are filled with the most amazing flavor textures! From caramelized apples, to creamy cream cheese filling. Drizzle with caramel and enjoy.

Apple Pie Filling

  • 1/2 tablespoon unsalted butter 
  • 23 tablespoons brown sugar *
  • 1.5 teaspoons ground cinnamon 
  • 2 large apples, peeled, cored and cut into chunks
  • 1/2 tsp vanilla extract
  • 1/41/2 cup water
  • 1.5 teaspoons cornstarch mixed in 1 tablespoon water

Cream Cheese Filling

  • 8 oz. cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 tsp vanilla extract
  • 2/3 cup heavy whipping cream

Topping

  • Handful of Granola of your choice for topping and filling
  • Caramel for drizzling (store bought or homemade)

Instructions

Apple Pie Filling 

  1. Melt butter. Add brown sugar and ground cinnamon. Stir for a few seconds.
  2. Add chopped apples and stir. Add 1/4 cup of water and vanilla extract.  Cook for a few minutes until apples look caramelized. 
  3. Mix cornstarch in 1 tablespoon of water. Add the cornstarch mixture and cook until sauce thickens. Add more water if sauce is too thick or not enough sauce. Add up to 1/4 cup of water.  Set aside to cool. 

Cream Cheese Filling

  1. To a mixer bowl, add heavy whipping cream. Whisk heavy cream until stiff peaks form. Set aside.
  2. Beat cream cheese, powdered sugar and vanilla extract until light and fluffy.
  3. Add whipped heavy cream and stir until combined.

Assemble

  1. Place a layer of apple pie filling to the bottom of a ramekin. Sprinkle a little bit of granola. Spread a layer of cream cheese. Add another layer of apple filling. Sprinkle granola. Drizzle with caramel. 

Notes

  • * Add 3 tablespoon of brown sugar if using granny smith apples. If using a sweeter apple add less sugar. You can also adjust sugar to your liking. 
  • Feel free to substitute yogurt for the cream cheese. You can use any vanilla yogurt of your choice. Add a bit of sugar or maple syrup to the yogurt if using unsweetened.
  • I prefer using granny smith apples. However any apples can be used. I’ve used honey crisp as well and it turned out delicious. I did use a bit less sugar since they are a bit sweeter than granny smith.
  • Use fruits that are in the season! Strawberries, raspberries, peaches… you name it! Be sure to omit the cinnamon, if the spice doesn’t work for the fruit. 
  • Add more water if needed! You’ll first add water to the apples and cook until caramelized. Then after adding the cornstarch mixture you will add more water. This creates that delicious thick apple sauce. If the sauce is too thick or not enough sauce, feel free to add more water. Add 1/4 cup -1/3 cup more water, 1 tablespoon at a time.
