Looking for a quick dessert? Look no further! These apple hand pies are the way to go. Caramelized apples are baked in a flaky and buttery dough. Serve with a scoop of ice cream or drizzle with some caramel. These apple desserts will become everyone’s favorite!

Ingredients

  • 1 puff pastry sheet, thawed
  • 2 medium apples, peeled, cored, chopped
  • 1 tbsp. unsalted butter
  • 2 – 2 1/2 tablespoons. brown sugar*
  • 1 teaspoon cinnamon
  • 1/8 teaspoon. nutmeg
  • 3 tablespoons water
  • 1/2 teaspoon cornstarch mixed in 1 tablespoon water
  • 1 egg for egg wash

Instructions

  1. Thaw puff pastry. (this may take up to 50 min) While the puff pastry is thawing make your apple pie filling.
  2. Peel, core, and chop the apples. 
  3. In a skillet, melt the butter. Add brown sugar, cinnamon and nutmeg. Stir until apples are coated. Then add the 3 tablespoons of water and cook until apples are tender.
  4. Add the cornstarch mixture and cook until thickened. Take off heat and set aside.
  5. Line baking sheet with parchment paper and set aside.
  6. Preheat oven to 400F.
  7. Cut the dough into 12 equal rectangles. Add the apple pie filling to 6 of the rectangles. Top each rectangle with the rest of the puff pastry dough. Pinch the dough with your fingers to seal. Transfer the apple hand pies to lined baking sheet. Then using a knife cut two slits on top of each hand pie. 
  8. In a small bowl whisk the egg. Brush the hand pies with whisked egg and sprinkle with course sugar.
  9. Bake for 15-20 minutes or until golden brown.

Notes

  • Adjust the amount of sugar as needed. Add more sugar if you are using tart apples. If the apples are sweet add less sugar. Taste the apples as they are cooking and adjust.
  • Make sure to cook your apples until they are tender. They should still have a slight crunch but should be slightly soft as well. Overcooking the apples cause the apples to become too soft after baking.
  • Use coarse sugar when sprinkling the hand pies. It adds a nice crunch. If you use granulated sugar it may become absorbed into the dough when baking.
  • Feel free to make the hand pies smaller or larger. 12 rectangles makes medium sized hand pies.
  • The apple filling should thicken after the adding the cornstarch, if it doesn’t sprinkle 1/2 teaspoon of cornstarch to the apple filling. Then stir until incorporated.
