White Chocolate Dipped Peppermint Cookies

These white chocolate dipped peppermint cookies will be one of the easiest holiday cookies you will make! No more waiting for your cookie dough to chill. Just mix, roll and bake! Dip in white chocolate and sprinkle with crushed candy canes to get the ultimate peppermint cookie!

Ingredients

  • 1 cup + 3 tbsp. all purpose flour
  • 1 tbsp. unsweetened cocoa powder
  • 4 oz unsalted butter (1 stick), softened
  • 1/2 cup powdered sugar
  • 1 egg yolk
  • 1 tsp peppermint extract
  • 6 oz white chocolate
  • Crushed candy canes 

Instructions

  1. Preheat oven to 350 F. Line large baking sheet with parchment paper. Set aside.
  2. In a medium bowl sift flour and cocoa powder. Set aside.
  3. Cream butter and powdered sugar until combined. 
  4. Add egg yolk and vanilla extract. Beat until combined.
  5. Add flour/cocoa. Mix on low speed until crumbly. 
  6. Transfer cookie dough to a floured surface. Mix dough with your hands until the dough forms a ball.
  7. Roll dough to about 1/4 – 1/2 inch thickness. Cut into 2 inch circles and transfer to the prepared baking sheet.
  8. Bake for 12 minutes. Cool completely.
  9. Melt white chocolate in the microwave, stirring every 30 seconds. When chocolate is almost melted, stir until smooth. For a stronger peppermint flavor add a dash of peppermint extract to the melted chocolate. Dip, or spread chocolate onto the bottom of the cookie. Sprinkle with crushed candy canes.
