What are white chocolate dipped peppermint cookies?
These cookie are chocolaty, crumbly and have a hint of peppermint flavor. They are dipped into white chocolate. Then crushed candy canes are sprinkled onto the chocolate to give the cookie a crunch.
Making the peppermint cookies
Combine flour and cocoa powder in a bowl. Then set aside.
Cream butter and powdered sugar. Next add the egg yolk and peppermint extract. Mix until combined. Add the flour and mix until the cookie dough is crumbly. Transfer the dough to a floured surface and form a ball.
Roll the dough into ¼ inch thickness. Cut 2 inch circles. Transfer and a baking sheet. Bake the cookies for 12 minutes. Cool completely before dipping in white chocolate.
Once the cookies have cooled dip each cookie into white chocolate or spread the chocolate with a spoon. Sprinkle with crushed candy canes.
How much peppermint extract should I add?
These cookies have a hint of peppermint extract. If you like your cookies to have a more peppermint flavor add a little bit more peppermint extract. You can also add peppermint extract to the white chocolate. I start by adding ¼ teaspoon of peppermint extract to the white chocolate. And go from there.
A tip on rolling out the dough…
Make sure your surface is well floured so the cookie dough doesn’t stick to the surface. If the dough sticks to your rolling pin, place a plastic wrap over the dough before rolling. This will ensure that the dough doesn’t stick to your rolling pin.

Ingredients
- 1 cup + 3 tbsp. all purpose flour
- 1 tbsp. unsweetened cocoa powder
- 4 oz unsalted butter (1 stick), softened
- ½ cup powdered sugar
- 1 egg yolk
- 1 tsp peppermint extract
- 6 oz white chocolate
- Crushed candy canes
Instructions
- Preheat oven to 350 F. Line large baking sheet with parchment paper. Set aside.
- In a medium bowl sift flour and cocoa powder. Set aside.
- Cream butter and powdered sugar until combined.
- Add egg yolk and vanilla extract. Beat until combined.
- Add flour/cocoa. Mix on low speed until crumbly.
- Transfer cookie dough to a floured surface. Mix dough with your hands until the dough forms a ball.
- Roll dough to about ¼ – ½ inch thickness. Cut into 2 inch circles and transfer to the prepared baking sheet.
- Bake for 12 minutes. Cool completely.
- Melt white chocolate in the microwave, stirring every 30 seconds. When chocolate is almost melted, stir until smooth. For a stronger peppermint flavor add a dash of peppermint extract to the melted chocolate. Dip, or spread chocolate onto the bottom of the cookie. Sprinkle with crushed candy canes.
