Strawberry Ice cream Cake

This strawberry ice cream cake is so quick to make. Homemade strawberry ice cream spooned over an Oreo crust. Topped with chocolate ganache, and chocolate dipped strawberries.

Summer brings a lot of ice cream and strawberries! A strawberry ice cream cake is the clear flavor combination choice. Perfect for summer and all those who love ice cream! Make this new favorite for your family and friends, and you won’t regret it. This strawberry treat is so tasty!

You will love this ice cream cake because it’s VERY easy to make! Delicious homemade strawberry ice cream is spooned over an Oreo crust. And topped with smooth chocolate ganache. This cake tastes just like a chocolate covered strawberry. YUM!

Making the strawberry ice cream cake

You will make the oreo crust first. Crush the Oreos by using a food processor. Mix crushed oreos with melted butter. Press the mixture into a pan. Refrigerate until the ice cream is ready.

Now you will make the strawberry ice cream. In a bowl, toss sugar and chopped strawberries and let that sit at room temperature for 5- 10 minutes. Puree a little over half of the strawberries until smooth. Combine all ingredients together in a bowl, including the chopped strawberries. Pour into ice cream maker and make ice cream according to the manufacturer. Spoon over Oreo crust. Freeze until firm, or at least 6 hours.

To make the chocolate ganache, warm the heavy whipping cream until it’s almost boiling. Pour heavy whipping cream into the chopped chocolate. Let it sit for a minute. Then stir until smooth.

Pour chocolate ganache over cake. Freeze until ready to serve.

Tips

  • If you don’t have a 6 inch springform pan, a regular 6 inch pan will work. First you will line the pan with plastic wrap. Make sure the plastic wrap hangs over edges for easier removal. Then line the pan with parchment paper. Make sure that the parchment paper is taller then the pan because the ice cream cake will be taller than the pan.
  • If you don’t have an ice cream maker, you can substitute any strawberry ice cream from your grocery store.
  • This ice cream recipe makes A LOT of ice cream. So you will have some ice cream left over. You can eat it, or you can make the cake in a larger pan.
  • I would recommend using good quality chocolate for the chocolate ganache. Good quality chocolate ensures a smooth ganache. A baking chocolate bar would be best.

Ingredients

Crust

  • 18 oreos, crushed
  • 3 tbsp unsalted butter, melted

Strawberry ice cream

  • 2 ¼ cup strawberries, chopped
  • ¾ cup of sugar, divided
  • 2 cups heavy whipping cream
  • 2 cups whole milk
  • 1 tsp lemon juice
  • ½ tsp vanilla extract

Chocolate ganache

  • 4 oz chocolate, chopped
  • ½ cup heavy whipping cream

Instructions

  1. Line 6×6 inch springform pan with parchment paper. 
  2. Combine crushed Oreos and melted butter. Press into prepared pan. Refrigerate until ice cream is ready.
  3. Toss chopped strawberries with half of the sugar. Let the strawberries sit at room tempurature for 5-10 minutes. 
  4. Puree a little over half of the strawberries until smooth.
  5. Combine all the ingredients in a bowl, including all the strawberries and the other half of the sugar.
  6. Pour into ice cream maker, and make ice cream according to the manufacturer. 
  7. Spoon ice cream over oreo crust. Cover with plastic wrap and freeze until firm. 
  8. When ready to serve, make the chocolate ganache. In a small sauce pan, warm heavy whipping cream on low heat until it is almost boiling. Pour the heavy whipping cream into chopped chocolate. Let it sit for a minute before stirring. Stir until smooth.
  9. Pour over ice cream cake. Freeze, or serve. 

Notes

*If you don’t have a 6 inch springform pan, you can use a regular 6 inch pan. First you will line with plastic wrap. Make sure that the sides extend over the edges for easier removal.  Then line with parchment paper. Make sure the parchment paper is higher then the pan because the ice cream cake will be taller then the pan.
