Strawberry filled Chocolate Cupcakes

These strawberry filled chocolate cupcakes are perfect for Valentines day, or any other special occasion. Moist chocolate cupcakes are filled with the most delicious strawberry sauce. Then frosted with strawberry cream cheese frosting.

Cupcake

  • 1 1/3 cup all purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 1/2 tsp. baking powder
  • 1/4 tsp baking soda
  • 2/3 cup vegetable oil
  • 3 large eggs
  • 1 cup granulated sugar
  • 1 1/2 tsp vanilla extract
  • 1/2 cup sour cream
  • 1/4 cup coffee

Strawberry filling*

  • 2 cups strawberries, halved
  • 1 tsp cornstarch + 1 tsp water
  • 1 tbsp. granulated sugar

Strawberry Frosting**

  • 12 oz. cream cheese, softened
  • 7 tbsp. unsalted butter, softened
  • 1/3 cup freeze dried strawberries
  • 1 tsp. vanilla extract
  • 3/41 cup powdered sugar

Instructions

  1. Make the strawberry sauce first.
  2. Combine strawberries and sugar in a medium sauce pan. Cook for 5 minutes or until they released their juice. In a separate bowl, stir water and cornstarch together, then add that to the strawberries. Cook for a few minutes or until thickened. Take off heat and cool completely.
  3. Make the chocolate cupcakes.
  4. Preheat oven to 350 F. Line 16 cupcakes with cupcake liners. Set aside. 
  5. In a medium sized bowl whisk flour, cocoa powder, baking soda and baking powder. Set aside.
  6. In a mixer bowl, beat eggs oil and sugar. Beat until combined or for about 3 minutes.
  7. Add sour cream and vanilla extract. Beat on medium/low speed until just combined.
  8. Add the dry ingredients. Mix on low speed until just combined. Do not over beat.
  9. Once the flour is almost incorporated into the batter add the coffee. Beat until combined.
  10. Divide the batter evenly among cupcake tins. Pour batter about 1/2-3/4 of the way.
  11. Bake for 18-10 minutes or until toothpick inserted comes out clean. Cool completely.
  12. Make the frosting.
  13. In a food processor or blender, grind the freeze dried strawberries. The strawberries will turn into powder. Set aside.
  14. Combine cream cheese, butter and vanilla extract. Beat until smooth and fluffy. Add powdered sugar and beat until fluffy and well incorporated. Add crushed freeze dried strawberries and beat until well combined.
  15. Assemble the cupcakes.
  16. Core cupcakes. You can use a cupcake corer or a knife.
  17. Fill the cupcakes with the strawberry sauce. Slice off the pointy end of the piece of cupcake that was cut off. Then place that over the filling.
  18. Frost the cupcakes with strawberry cream cheese frosting.

Notes

*After the strawberry sauce cooled, I like to add strawberries slices into the strawberry sauce. Cut a few strawberries into small pieces and mix them with the strawberry sauce. This is optional.

**If the frosting is too thick you can add a little bit of milk or heavy whipping cream.
