Soft and Chewy Oatmeal Chocolate Chip Cookies

Chewy oatmeal chocolate chips cookies – soft, chewy oatmeal cookies with loads of chocolate chips! These will satisfy all your cookie and chocolate cravings.

Ingredients

  • 1 stick unsalted butter, slightly softened
  • 2/3 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract, or paste
  • 1 cup flour
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1 1/2 cup old fashioned rolled oats
  • 3/4 cup chocolate chips

Instructions

  1. In a medium bowl combine: flour, salt, baking soda and old fashioned rolled oats. Set aside.
  2. In a mixing bowl, cream the butter and sugars until combined.
  3. Add the egg and beat until fluffy and combined.
  4. Add the flour/rolled oats mixture. Mix on low speed until just combined. Add the chocolate chips. Mix with a spatula until chocolate chips are incorporated. Cover and chill the dough for at least 1 hour.
  5. Preheat oven to 350 F. Line large baking sheet with parchment paper.
  6. Scoop a rounded tablespoon of dough, shape into a ball and place on prepared baking sheet. 
  7. Bake for 10 minutes or until edges or golden brown. Cool for 5 minutes before transferring to cooling rack.
