This tiramisu is simple to make and tastes amazing! Ladyfingers are soaked in coffee then topped with airy and light cream. This dessert is perfect for any occasion!

6 large egg yolks
2/3 cups granulated sugar
16 oz mascarpone cheese
1 1/2 cups heavy whipping cream
Approx. 30 Lady fingers
1 3/4 cup espresso or strong coffee
2 tbsp rum
Instructions
Prepare your coffee. Mix cooled coffee with rum and set aside.
In a double broiler mix egg yolks and sugar for 10 minutes. The egg yolk mixture will be light yellow in color and slightly thick.
If the egg yolk mixture is hot cool for a few minutes until warm. Transfer to a mixer and whisk for a few minutes until thick.
Add the mascarpone cheese and whisk until well combined.
In a separate bowl whisk the heavy whipping cream until stiff peaks form.
Add the whipped heavy whipping cream to the mascarpone/egg mixture. Mix on low speed for 1 minute. Finish mixing with a spatula until the cream is well combined.
Dip lady fingers into coffee mixture and place them in baking dish. Place cream over first layer of lady fingers. Repeat layer with one more layer of lady fingers and cream. (you will have two layers in total) Dust with cocoa.
Refrigerate the tiramisu for 6 hours before serving.
