Raspberry oatmeal crumble bars – A perfectly sweet and tart raspberry filling baked on a buttery and crumbly crust and sprinkled with crispy oatmeal topping.

Shortbread crust

  • 1/2 cup unsalted butter, melted
  • 3 tbsp. lightly packed brown sugar
  • 1 tbsp. granulated sugar
  • 1 cup all purpose flour

Oatmeal topping

  • 3 tbsp. unsalted butter, cold, cut into cubes
  • 1/2 cup old fashioned rolled oats
  • 3 tbsp. all purpose flour
  • 1/4 cup brown sugar

Filling

  • 1/22/3 cup raspberry preserves
  • handful fresh raspberries

Instructions

  1. Preheat oven to 350 F. Line an 8×8 pan with foil. Make sure the foil extends over the edges for easier removal. Set aside.
  2. Make the crust:  Mix melted butter, sugars and flour. It should come together and start forming a bowl. Press the mixture into prepared pan. Bake for 10 minutes. Set aside.
  3. Make the topping. Place oats, flour and brown sugar into a medium bowl. Cut the cold butter into the mixture using a fork, butter knife or pastry cutter. Keep on cutting the butter into the mixture until the mixture resembles medium sized crumbs.
  4. Assemble: Spread raspberry jam over the baked crust. Add a few fresh raspberries. Sprinkle the oatmeal crumble over the raspberry jam/raspberries. 
  5. Bake the crumble bars for 30-40 minutes or until top is golden brown and filling is bubbly. Let the bars cool completely before cutting them.
