No Bake Strawberry Cheesecake Tart

This no bake strawberry cheesecake tart is filled with sweet and smooth cream cheese filling. Topped with juicy roasted strawberries. All this deliciousness is served on an Oreo crust. Ingredients

  • 2 1/2 cups Oreo’s, crushed
  • 3 tbsp. unsalted butter, melted
  • 1 cup heavy whipping cream, cold
  • 8 oz. cream cheese, softened
  • 34 tbsp. granulated sugar*

For the roasted strawberries

  • 1 lb. strawberries
  • 13 tbsp. granulated sugar*

Instructions

  1. Make strawberries first:  Preheat oven to 375 F. Hull the strawberries and slice the large strawberries in half. Place on baking sheet lined lined with parchment paper. Sprinkle with some sugar. Bake the strawberries for 15-20 minutes or until soft. Cool completely.
  2. Make the crust: Stir crushed oreo’s and butter. Press into 8 inch tart pan. Refrigerate while making the filling.
  3. Make the cheesecake filling: Beat heavy whipping cream until stiff peaks form. Transfer to another small bowl and set aside.
  4. In the same mixer bowl, beat cream cheese and sugar until light and fluffy.
  5. Fold in the heavy whipping cream. Spoon cream cheese filling over prepared crust. Refrigerate for at least 1 hour before serving.
  6. Once ready to serve, spoon roasted strawberries over cheesecake filling.

Notes

* Adjust sugar in the cheesecake filling and the roasted strawberries. Add the full amount if sugar if you like the cream cheese sweet. If the strawberries are ripe and sweet – add less sugar, if they are a bit tart – add more sugar.
