This kale, sausage and potato soup is super simple to make. It’s hearty, warming, full of greens and flavor… and so delicious!

This kale, sausage and potato soup is perfect for those cold weather days when you’re craving something warm to eat. This one pot soup is simple to make; it’s hearty and it’s delicious. It has become my go to soup when I’m craving something warm for dinner. The soup is similar to Zuppa Toscana but lighter and just as tasty!
Ingredients needed to make the soup
- Potatoes
- Italian sausage
- Onion
- Garlic
- Chicken broth
- Kale
- Seasonings
Making the kale, sausage and potato soup
- Cook onions and sausage. Cook until the sausage is cooked through and nicely brown. Breaking large pieces of sausage as you cook.
- Add the seasonings. You will first add the garlic and cook for 30 seconds. Then add the seasonings and cook for another 30 seconds.
- Add broth and potatoes. Add the broth first. Bring to a light boil and then lower the heat. Then add the potatoes and bay leaf. Simmer until the potatoes are cooked. Approximately 10-15 minutes.
- Add kale and half and half. Add the kale first and stir until it wilts. Then stir in half and half.
To easily remove the casting off of the sausage: I lightly cut the sausage lengthwise to make a slit. Then remove the sausage from the casting.
Can I substitute any ingredients?
Sausages: I prefer using hot Italian sausages. They add lots of flavor and a little kick to the soup. However, you can substitute hot Italian sausages for mild sausages or any Italian sausages. Keep in mind that you may have to add more seasonings. I also prefer using sausage links. They cook nicely and don’t break apart as much like ground sausage.
Kale: I love using kale in all my soups! Fresh or frozen kale works. Spinach can also be used instead of kale.
Seasonings: I use oregano to season my soup. But you can use any seasonings of your liking. Italian seasoning works amazing in this recipe!

Ingredients
- ½ lb. hot Italian sausage links, casting off and cut into pieces
- 1 small yellow onion, chopped
- 3 garlic, minced
- ¼ tsp. oregano or Italian seasoning, or a spice of your choice
- ¼ tsp. red pepper flakes
- salt, and pepper to taste
- 1 bay leaf
- 5 cups chicken broth
- 1 lb. potatoes, peeled, and cut into bite size cubes
- ⅓ cup half and half
- Small bunch of kale, torn into bite size pieces
Instructions
- Take the casting off the sausages and cut them into bite size pieces. I lightly cut the sausages lengthwise to make a slit. Then it’s easy to take the sausage out.
- Heat a soup pot on medium heat. Add the onions and sausages. Cook until sausages are cooked through and nicely brown. Break any large pieces of sausages as you cook them.
- Lower the heat. Add garlic and cook for 30 seconds or until fragrant. Add the spices and cook for another 30 seconds.
- Add the chicken broth. Bring to a boil and then reduce heat to medium/low. Add the potatoes and bay leaf. Simmer for 10-15 minutes or until potatoes are done.
- Add the kale and stir until wilted. Then add the half and half and cook for 2-3 minutes. Add salt and pepper to taste.
