Easy Cherry Hand Pies

These easy cherry hand pies are flaky, crispy and filled with juicy fresh cherries. They’re made from puff pastry sheets which makes them the quickest hand pies you’ll ever make.

Ingredients

  • 1 puff pastry sheet
  • 10 oz. cherries, pitted
  • 13 tsp. granulated sugar *
  • 1 tsp. cornstarch 

Instructions

  1. Take out puff pastry from the freezer. Let it sit out on the counter to thaw. This can take 40-50 minutes. 
  2. Preheat oven to 400 F. Line large baking sheet with parchment paper. Set aside. 
  3. Combine cherries, sugar and cornstarch in a medium saucepan. Cook on medium heat for 10-15 minutes. Until cherries are slightly soft and the juices have thickened. Set aside.
  4. Place the puff pastry on lightly floured surface. Roll the puff pastry dough, about 1/2 -1 inch on each side. Cut into 12 squares.
  5. Place cherry filling on 6 of the puff pastry squares. Cover each hand pie with remaining puff pastry squares. Pinch together with a fork. Cut two slits on top. Place cherry hand pies on prepared baking sheet.
  6. In a small bowl, whisk one egg. Lightly brush the hand pies with whisked egg. Sprinkle with coarse sugar. (optional)
  7. Bake for 17-25 minutes or until golden brown.

Notes

* Use more or less sugar. The cherries I used were sweet, so I didn’t need lots of sugar.
