These easy cherry hand pies are flaky, crispy and filled with juicy fresh cherries. They’re made from puff pastry sheets which makes them the quickest hand pies you’ll ever make.

These cherry hand pies have flaky crust. They’re filled with fresh sweet cherries. You won’t be able to resist this perfect little treat. Serve these with a scoop of vanilla ice cream for the perfect summer treat.
Ingredients needed
- Puff pastry sheet: This makes the recipe so quick to make.
- Cherries: Fresh or frozen cherries will work.
- Sugar: You will use granulated sugar.
- Cornstarch: This will thicken up the cherry filling.
Making the cherry pie filling
Before making the cherry pie filling, take out the puff pastry to thaw.
Combine cherries, sugar and cornstarch in a medium saucepan. Cook on medium heat for 10-15 minutes. Until cherries are slightly soft and the cherry juices have thickened. Set aside.
* Use as much or little sugar as you like. The cherries I had were sweet, so I did not need to use a lot of sugar.
Make the cherry hand pies
Place the puff pastry sheet on lightly floured surface. Roll the puff pastry dough, about ½ -1 inch on each side. Cut into 12 squares. Place cherry filling on 6 of the puff pastry squares. Try to keep all of the cherry juices in the center, but if some spills out its ok. Cover each hand pie with remaining puff pastry squares. Using the tines of a fork, crimp the edges to seal the hand pies. Cut two slits on top. Then place hand pies on large baking sheet lined with parchment paper.
In a small bowl whisk egg. Lightly brush the top of each hand pie with egg wash. Then sprinkle with coarse sugar. (optional) Bake for 17-25 minutes or until golden brown.
How to serve hand pies
Serve these with a scoop of vanilla ice cream or as is. They are delicious both ways!

- 1–3 tsp. granulated sugar *
- 1 tsp. cornstarch

- Take out puff pastry from the freezer. Let it sit out on the counter to thaw. This can take 40-50 minutes.
- Preheat oven to 400 F. Line large baking sheet with parchment paper. Set aside.
- Combine cherries, sugar and cornstarch in a medium saucepan. Cook on medium heat for 10-15 minutes. Until cherries are slightly soft and the juices have thickened. Set aside.
