Cinnamon Apple Crumb Cake With Maple Glaze

This cinnamon apple crumb cake is moist, soft and studded cinnamon apples. It’s topped with cinnamon oatmeal crumble then drizzled with maple glaze.

If you love apples, cinnamon and crumble… this cake is for you! This apple crumble cake is moist and subtly spiced with cinnamon. Brown sugar cinnamon apples are added to the cake batter. Oatmeal crumble is sprinkled on top. The cake is finished with a maple glaze. Crumble cake can’t get much better than this! And you know what the best part is? You can enjoy it for breakfast.

Ingredients needed

For the cinnamon apple crumb cake

  • Flour: To bring structure to the cake.
  • Sugar: A mixture of brown sugar and white sugar. Brown sugar adds moister and more flavor to the cake.
  • Oil: Any neutral oil, like vegetable oil or grapeseed oil.
  • Egg: To bring structure to the cake.
  • Baking powder: To ensure the cake rises.
  • Milk: To soften the cake texture.
  • Sour cream: To ensure the cake is moist.

For the oatmeal topping

  • Apples: Feel free to use any kind of apples.
  • Butter
  • Flour
  • Brown Sugar
  • Cinnamon
  • Old fashioned oats: Be sure to use old fashioned rolled oats. Not quick oats. As it can change the texture of the topping.

For the maple glaze

  • Maple syrup
  • Butter
  • Powdered sugar
  • Milk

Making the cinnamon apple crumb cake

  1. Make the oatmeal topping: Whisk flour, brown sugar and cinnamon in a medium size bowl. Add the cubed butter. With a pastry cutter, fork, knife or hands cut the butter into the mixture until it resembles medium size crumbs. Set aside.
  2. Cut the apples: Chop the apples. Toss with cinnamon and brown sugar and set aside.
  3. Make the cake layer: Whisk flour, cinnamon, baking powder and baking soda in a medium size bowl. Then set aside. In a mixer bowl, with a whisk attachment, add the eggs, oil and sugars. Beat until combined. Then add the sour cream and milk. Beat until combined. Add the flour mixture to the mixer and beat until flour is just incorporated. The batter will be thick!
  4. Assemble and bake: Pour the cake batter into the cake pan. Add the chopped apples and lightly press the apples into the batter. Sprinkle with the oatmeal topping. Bake until toothpick inserted comes out clean and topping is dark golden brown.
  5. Make the glaze: Add milk, maple syrup and powdered sugar to a medium bowl. Whisk until combined and smooth. Add more milk or powdered sugar until desired consistency. Then drizzle over cake.

Frequently asked questions

What Kind of apple do I use and how do I slice them?

For most of my baked goods I prefer using granny smith apples. They’re crisp and tart. Which is perfect when making desserts. I also use honey crisp apples. They are slightly sweeter than granny smith and are crisp. Feel free to use any apples of your choice here! Slice apples into medium and small chunks to give a good texture and variety to the cake.

Do I need to refrigerate the apple crumb cake?

Apple crumb cake can be left at room temperature covered for 2 days. Refrigerate for up to 5 days.

Ingredients

For the cake

  • 2 cups all purpose flour
  • 2 teaspoons baking powder
  • Pinch of salt
  • 1 teaspoon ground cinnamon
  • ⅓ cup vegetable oil
  • ⅓ cup granulated sugar
  • ¼ cup brown sugar
  • 1 egg
  • ¼ cup sour cream
  • ⅔ cup milk

For the apples

  • 1–2 large apple
  • 1 teaspoon ground cinnamon
  • 1 tablespoon brown sugar

For the topping

  • 4 tablespoons butter
  • ¼ cup flour
  • ¼ cup brown sugar, packed
  • ⅓ cup old fashioned rolled oats
  • ½ tablespoon cinnamon 

Glaze

  • 1 tablespoon unsalted butter, melted
  • 1 tablespoon maple syrup
  • ¼ cup powdered sugar
  • 1 tablespoon milk

Instructions

For the topping

  1. Whisk flour, brown sugar and cinnamon in a medium size bowl. Add the cubed butter. With a pastry cutter, fork, knife or hands cut the butter into the mixture until it resembles medium size crumbs. Set aside. 
  2. Chop the apples. Toss with cinnamon and brown sugar and set aside.

For the cake

  1. Preheat oven to 350 F. Lightly grease an 8 inch springform pan. Set aside.
  2. Whisk flour, cinnamon, baking powder and baking soda in a medium size bowl. Then set aside.
  3. Into a mixer bowl add the eggs, oil and sugars. Beat until combined.
  4. Add the sour cream and milk. Beat until combined.
  5. Add the flour mixture to the mixer and beat until flour is just incorporated. The batter will be thick! 
  6. Pour the cake batter into the prepared cake pan.
  7. Add the chopped apples and lightly press the apples into the batter.
  8. Sprinkle with the oatmeal topping.
  9. Bake 40-50 minutes or until toothpick inserted comes out clean and topping is dark golden brown.

For the glaze

  1. To a small bowl add melted butter, maple syrup, powdered sugar and milk. Whisk until combined and smooth. Add more milk or powdered sugar until desired consistency. Then drizzle over cake.
